These jet-fueled no-bake cookies are awesome for when you’re looking for something sweet to eat and need a burst of energy too. You can make these with common ingredients that you most-likely already have in your cabinets and you don’t even have to turn on the oven (energy-saver alert!). I decided to add the instant coffee to the recipe because it’s still hanging around (from this coffee emergency) and needs to be put to use already!
Jet-Fueled No-Bake Cookies
Ingredients
2 cups granulated sugar
8 tablespoons (1 stick) margarine or butter
1/2 cup low-fat milk (almond or soy milk works too)
1/3 cup baking cocoa
1 tablespoon instant coffee
3 cups quick or old-fashioned oats (go generic; name-brand tastes no different)
Preparation
In a large saucepan combine sugar, margarine, milk, cocoa, and instant coffee. Bring to a boil over medium heat while stirring often. Continue to boil for 3 more minutes while stirring.
Remove from the heat and slowly stir in the oats (if you used old-fashioned oats let the mixture cool in the pan before moving on to the next step). Drop heaping tablespoon sized spoonfuls onto a wax-papered pan (use a cereal box liner instead buying new wax paper). Set in the refrigerator until firm.
Makes about 3 dozen.

Thats the recipe for classic Swedish “Chokladbollar”. My absolute favorite. Must try the Nutella version soon. :)
